What is seasoning?

Seasoning is the process of burning off the organic compounds in cooking oils that, once finished, leaves a hard protective layer bonded to the steel surface. This protective layer will not only help prevent corrosion but will also provide a natural stick resistant surface. Seasoning your griddle consists of an initial seasoning process and then simple maintenance throughout the life of your griddle.
